Honey can be so much more than something stirred into tea.

In The Giddy Bee's Honey Infusion Workshop, guests explore the art of pairing honey with herbs, spices, botanicals and other ingredients to create flavorful, versatile infused honeys.

This is a hands-on culinary experience that combines guided tasting, ingredient exploration and creative experimentation.

Guests will learn how different honeys and ingredients work together, discover ways infused honey can be used in cooking and everyday wellness traditions, and then create their own collection of infusions to take home.

Depending on the workshop format, each participant will create 3–4 custom infused honeys plus a traditional honey electuary.

You'll leave with jars in hand, plenty of ideas for how to use them—and a completely different appreciation for what a jar of honey can become.

What Is Infused Honey?

Infused honey is honey intentionally combined with herbs, spices, botanicals, fruits or other ingredients so the honey takes on new layers of aroma and flavor.

Depending on the ingredients you choose, an infusion might be:

  • Bright and citrusy
  • Warm and spicy
  • Floral and aromatic
  • Earthy and herbal
  • Sweet and comforting
  • Bold and savory

We'll talk about how to choose a honey that complements the ingredients rather than overwhelms them—and why the flavor of the honey itself matters.

Infused honey can become an incredibly versatile ingredient for the kitchen, beverages, entertaining, gift giving and personal rituals.

What Will We Do During the Workshop?

The experience begins with a guided exploration of honey, herbs, spices and other infusion ingredients.

We'll taste, smell and compare ingredients while talking about which combinations naturally complement one another.

Then the real fun begins.

Guests will create their own collection of infused honeys, choosing from curated ingredients and flavor directions to develop combinations they can enjoy at home.

Depending on the event format, participants will create:

  • 3–4 custom infused honeys
  • 1 honey electuary
  • Ideas and inspiration for using each creation at home

No previous experience is necessary.

We provide the ingredients, guidance and supplies.

You bring your curiosity.

What Is a Honey Electuary?

An electuary is a traditional preparation made by combining honey with finely powdered herbs, spices or botanicals to create a thick, spoonable mixture.

Unlike an infused honey, where ingredients are typically allowed to steep in the honey, an electuary keeps the powdered ingredients incorporated directly into the honey.

Electuaries have a long history of use in traditional food and wellness practices and can also be a wonderful way to explore flavor.

During the workshop, we'll create an electuary while discussing ways it can be enjoyed as part of an everyday culinary or personal ritual.

This workshop is not an herbalism class and does not provide medical advice or treatment recommendations. Our focus is on honey, flavor, culinary creativity and the traditional ways people have combined honey with herbs and botanicals.

One of the most enjoyable parts of honey infusion is discovering how dramatically an ingredient can change a honey.

Depending on availability and the theme of your workshop, we may explore ingredients such as:

Larger workshops can be customized based on group size, available time and the number of hands-on components included.

Because this is a hands-on workshop with take-home materials, final pricing depends on the number of participants and the amount of product created.

No.

While we explore herbs, spices, botanicals and some of their traditional uses, this is not an herbal medicine or herbalism course.

We do not diagnose, treat or make medical recommendations.

Who Leads the Honey Infusion Workshop?

The workshop is led by Anne Marie Katalenas, founder and beekeeper behind The Giddy Bee.

Anne Marie is a Certified South Carolina Beekeeper and Level 1 Certified Honey Sommelier through the American Honey Tasting Society.

She currently serves as Vice President of the Lancaster County Beekeepers Association and has received recognition including South Carolina Beekeepers Association Volunteer of the Year, Lancaster County Volunteer of the Year and Lancaster County Beekeeper of the Year.

An experienced corporate and community speaker, Anne Marie combines her knowledge of honey, sensory evaluation, culinary creativity and hands-on education to create workshops that are informative, approachable and fun.
