Upcoming Experience: Honeys of the Southeast

Join The Giddy Bee at Windcrest Farms in Monroe, NC for a 90-minute guided tasting devoted to the diversity and flavor of honeys from across the Southeast.

Guests will taste six regional honeys while learning how floral source, geography, soil, weather, and seasonal conditions influence each harvest. The working lineup includes regional favorites such as Clover, Sourwood, Tupelo, Gallberry, Orange Blossom, and Wildflower, with the final selection based on seasonal availability.

A featured part of the class will be a side-by-side tasting of two Wildflower honeys: one from Windcrest Farm in Union County and one from The Giddy Bee in Lancaster County. This comparison will show how two honeys with the same general label can still differ in color, aroma, texture, and flavor because of their local landscape and bloom conditions.

Guests will also learn how to read honey labels, understand common honey terms, recognize when “local” matters, and explore everyday culinary uses and pairings.

Each participant will receive a tasting card to guide the experience and record observations of color, aroma, texture, flavor, finish, and floral source.

No previous honey knowledge is required — just curiosity.

The Giddy Bee offers small-group honeybee-inspired experiences designed for private events, resident programming, wellness activations, team gatherings, farm events, garden clubs, food-focused gatherings, lifestyle spaces, and intimate community workshops. Each experience is educational, approachable, and thoughtfully curated to help guests connect more deeply with honey, beeswax, botanicals, and the natural world.

Guided Honey Tasting Experiences

Honey is more than sweet — it carries the story of a place, a season, a flower, and a hive.

Our guided honey tasting experiences introduce guests to the sensory art of tasting honey while exploring how floral source, season, terroir, and region shape each jar. Guests will learn how to taste honey more intentionally, how to read honey labels, what common honey terms mean, and how different honeys can be used in everyday food and drink.

Each guest receives a tasting card to guide the experience, take notes, and support their exploration. Guests will also take home a small goodie bag as a sweet reminder of the experience.

Select honeys from the tasting may be available for purchase after the experience for guests who wish to continue exploring at home.

Option 1: Honeys of the Carolinas

This guided tasting focuses on the beauty and diversity of honey from the Carolinas and nearby regional landscapes. Guests will taste a curated selection of local and regional honeys while learning how floral sources, seasonal blooms, and terroir influence the flavor, color, aroma, and texture of honey.

This experience may include familiar local and regional honey styles such as Wildflower, Clover, Sourwood, Gallberry, or other Southeast favorites based on seasonal availability.

Guests will learn:

  • Why honey changes by season, region, and floral source
  • How to read honey labels with more confidence

This guided tasting expands beyond our immediate region and introduces guests to a curated selection of honeys from outside the Carolinas. Guests will explore how honey reflects different floral sources, growing regions, climates, and beekeeping traditions.

The tasting may include regional and specialty honeys from across the Southeast, North America, or select curated sources, depending on availability.

Guests will learn:

Create Your Own Honey Ritual is a hands-on honeybee-inspired wellness workshop centered around honey, beeswax, botanicals, and simple seasonal self-care.

This experience blends education, creativity, and mindful making. Guests will learn about the connection between honeybees, natural ingredients, and everyday rituals, then create their own personalized honey ritual items to take home.

This workshop is designed to feel relaxing, creative, and approachable — no prior experience needed.

Guests may explore ingredients such as honey, beeswax, herbs, botanicals, infused oils, salts, or other simple natural elements depending on the selected workshop format.

Participants will:

  • Learn about honey, beeswax, botanicals, and their role in simple self-care
  • Explore the idea of seasonal rituals inspired by the hive
  • Create personalized honeybee-inspired ritual items to take home

Final pricing may vary depending on event location, travel, customizations, product selections, and any special requests.

Experiences are designed for adults and older youth. They are not recommended for children under the age of 12.

Standard pricing includes locations within the greater Charlotte,NC metro area. Locations outside this service area may include an additional travel fee.
